Zuppa di Zucca Soup

Ingredients:

  • Water (4 cups)

  • Salt (1 tbsp)

  • Minced Ginger (1 tbsp)

  • Carrots (2)

  • Oregano (1 tbsp)

  • Sweet Potato (2)

  • Tomato Paste (2 tbsp)

 

Ingredients:

  • Orange Lentils (1 cup)

  • Small Onions (4)

  • Tomato (1)

  • Pumpkin (1 lb)

 

Instructions:

  1. Place all the ingredients into a pot and add water.

  2. Boil the pot on the stove’s High heat setting for 2 minutes with the lid half covering the pot.

  3. Reduce the stove’s heat setting to Low to let it simmer for 30 minutes.

 

Instructions:

  1. Pour the mixture into a blender.

  2. Mix it for 1 minute until the soup has a smooth consistency and no chunks.

Storing and Serving:

  1. Pour the mixture into your storage container of choice and let it cool down for 5 minutes before serving.

  2. For leftovers, you can keep the soup in the fridge for 3 days or 3 months in the freezer.
