Chicken Milanese

Ingredients:

  • Lemon (1)

  • Avocado (1)

  • Red Beets (1)

  • Cherry Tomatoes (6)

  • Spring Mix Greens (100g)

 

Ingredients:

  • Chicken Breast (8 pcs)

  • Flour (1/2 cup)

  • Paprika (1 tsp)

  • Turmeric (1 tsp)

  • Plain Cornflakes (1 cup)

    • crushed (can use a food processor)

 

Ingredients:

  • Eggs (3)

  • Salt (1 tsp)

  • Black Pepper (1 tsp)

  • Milk (1/2 cup)

 

Instructions:

  • Marinate the chicken with the paprika, turmeric, black pepper, and salt.

  • Cover both sides of the chicken with the spices evenly.

 

Instructions:

  • Crack the eggs and mix in the milk until it is one consistent mixture.

 

Instructions:

  • Add the paprika, turmeric, black pepper, and salt into the mixture.

  • Stir until the mixture is even.

 

Instructions:

  • Mix the flour with the paprika, turmeric, black pepper, and salt.

  • Coat the chicken breast with the mixed flour.

 

Instructions:

  • Coat both sides of the chicken breast with the mixed flour.

  • Dip the chicken into the mixture for an even coating.

 

Instructions:

  • Place the chicken breast into the crushed cornflakes to make a breading.

  • Flip and coat the other side of the chicken.

 

Instructions:

  • Place the breaded chicken breast into an air fryer.

  • Cook on the Air Fry setting at 390°F (198°C) for 20 minutes.

    • Settings will vary per air fryer, adjust accordingly

    • If you don’t have an air fryer, put it in the oven at 350°F (176°C) for 30 minutes.

  • Mid-way into the air frying time at 10 minutes, flip the chicken breasts to the other side for even cooking until golden brown.

 

Instructions:

  • Add the spring mix greens to the base of the bowl.

  • Add sliced avocados, cherry tomatoes, red beets, and a lemon.

  • Slice the chicken katsu into even pieces and place into the bowl.

  • Drizzle with olive oil or balsamic vinegar.

 

Chicken Milanese completed!
