Instructions:

Marinate the chicken with the paprika, turmeric, black pepper, and salt.

Cover both sides of the chicken with the spices evenly.

Stir until the mixture is even.

Coat the chicken breast with the mixed flour.

Coat both sides of the chicken breast with the mixed flour.

Dip the chicken into the mixture for an even coating.

Place the chicken breast into the crushed cornflakes to make a breading.

Flip and coat the other side of the chicken.

Place the breaded chicken breast into an air fryer.

Cook on the Air Fry setting at 390°F (198°C) for 20 minutes.

Settings will vary per air fryer, adjust accordingly

If you don’t have an air fryer, put it in the oven at 350°F (176°C) for 30 minutes.

Mid-way into the air frying time at 10 minutes, flip the chicken breasts to the other side for even cooking until golden brown.

Add the spring mix greens to the base of the bowl.

Add sliced avocados, cherry tomatoes, red beets, and a lemon.

Slice the chicken katsu into even pieces and place into the bowl.

Drizzle with olive oil or balsamic vinegar.
