Tzatziki Pita

Ingredients:

  • Corn (1/2 cup)

  • Yogurt (1 cup)

  • Dried Mint (1 tsp)

  • Red Pepper (1)

  • Cucumbers (1)

  • Black Beans (1/2 cup)

  • White Button Mushrooms (1 cup)

 

Ingredients:

  • Pita Bread (2)

    • Cut into 4 slices each

  • Parmesan (1/4 cup)

  • Green Onion (100g)

    • optional: garlic

 

Instructions:

  • Dice the mushrooms, red peppers, and green onions.

 

Instructions:

  • Drizzle the mushrooms with olive oil and oregano.

  • Cook on the High heat setting for 5 minutes.

 

Instructions:

  • Mix the cucumbers, dried mint, and yogurt until the sauce has a smooth consistency.

 

Instructions:

  • Stuff each pita bread slice with corn, green onions, red peppers, onions, and parmesan.

  • Gently close the quesadilla without overstuffing.

 

Instructions:

  • Place the quesadilla into a panini press/grill for 2 minutes until golden brown.

 

Tzatziki Pita completed!

Ready to be served – pour the sauce into a small bowl and dip the quesadilla as you eat. Refrigeration for storage is not recommended.
