White Button Mushrooms (1 cup)

Pita Bread (2)
Cut into 4 slices each
Parmesan (1/4 cup)
Green Onion (100g)
optional: garlic
Instructions:
Dice the mushrooms, red peppers, and green onions.
Instructions:
Drizzle the mushrooms with olive oil and oregano.
Cook on the High heat setting for 5 minutes.
Instructions:
Mix the cucumbers, dried mint, and yogurt until the sauce has a smooth consistency.
Instructions:
Stuff each pita bread slice with corn, green onions, red peppers, onions, and parmesan.
Gently close the quesadilla without overstuffing.
Instructions:
Place the quesadilla into a panini press/grill for 2 minutes until golden brown.
Tzatziki Pita completed!
Ready to be served – pour the sauce into a small bowl and dip the quesadilla as you eat. Refrigeration for storage is not recommended.
