Spring Roll Pastry Paper (20 sheets)
Instructions:

Shred the cabbage leaves and carrots.

Dice the ginger, green onions, and red peppers.
Instructions:

Cook the shrimp with the extra virgin olive oil (1 tbsp) on the stove’s High heat setting for 5 minutes.

Add the oregano and rosemary.

Cook the cabbage, carrots, and red peppers with the extra virgin olive oil (1 tbsp) on the stove’s High heat setting for 10 minutes.

Mix the green onion and keep cooking on the stove’s High heat setting for 1 minute.

Mix the cooked shrimp and vegetables together.

Let them cool down for 10 minutes before starting to stuff rolls.

In another bowl, mix the cornstarch and water.

Take a spoonful of the veggie shrimp stuffing (1 tbsp) and place onto the spring roll pastry paper.

Roll paper as shown in the photos.

Roll the spring rolls until reaching a small triangle at the end.

Pour a small amount of cornstarch on the triangle to glue the spring roll paper closed.

After gluing the spring roll closed, add to a paper lined with wax paper to prevent sticking.

Make 20 spring rolls.

Fry the spring rolls in extra virgin olive oil (1/2 cup) on the stove’s High heat setting for 3 minutes.

Optional healthier alternative: Brush the spring rolls with the olive oil and put them in the Air Fryer.

Fry until golden brown and flip sides for even cooking.

Place the spring rolls on a paper towel to absorb excess oil.

Pat them with an additional paper towel before serving.

Ready to be served – serve with your choice of soup or dipping sauce. For storage, you can freeze the pre-fried spring rolls for 2 months. Otherwise, eat immediately if fried.
