Ingredients:

  • Ginger (1 tbsp)

  • Cabbage (2 cups)

  • Red Pepper (1)

  • Green Onion (4)

  • Carrot (2)

 

Ingredients:

  • Shrimp (1 lb)

  • Oregano (2 tsp)

  • Rosemary (2 tsp)

  • Extra Virgin Olive Oil (2 tbsp)

  • Soy Sauce (1 tbsp)

 

Ingredients:

  • Water (2 tbsp)

  • Corn Starch (1 tbsp)

  • Spring Roll Pastry Paper (20 sheets)

 

Instructions:

  • Shred the cabbage leaves and carrots.

  • Dice the ginger, green onions, and red peppers.

 

Instructions:

  • Cook the shrimp with the extra virgin olive oil (1 tbsp) on the stove’s High heat setting for 5 minutes.

  • Add the oregano and rosemary.

 

Instructions:

  • Cook the cabbage, carrots, and red peppers with the extra virgin olive oil (1 tbsp) on the stove’s High heat setting for 10 minutes.

 

Instructions:

  • Mix the green onion and keep cooking on the stove’s High heat setting for 1 minute.

 

Instructions:

  • Mix the cooked shrimp and vegetables together.

  • Let them cool down for 10 minutes before starting to stuff rolls.

  • In another bowl, mix the cornstarch and water.

 

Instructions:

  • Take a spoonful of the veggie shrimp stuffing (1 tbsp) and place onto the spring roll pastry paper.

  • Roll paper as shown in the photos.

 

Instructions:

  • Roll the spring rolls until reaching a small triangle at the end.

  • Pour a small amount of cornstarch on the triangle to glue the spring roll paper closed.

 

Instructions:

  • After gluing the spring roll closed, add to a paper lined with wax paper to prevent sticking.

  • Make 20 spring rolls.

 

Instructions:

  • Fry the spring rolls in extra virgin olive oil (1/2 cup) on the stove’s High heat setting for 3 minutes.

    • Optional healthier alternative: Brush the spring rolls with the olive oil and put them in the Air Fryer.

  • Fry until golden brown and flip sides for even cooking.

Instructions:

  • Place the spring rolls on a paper towel to absorb excess oil.

  • Pat them with an additional paper towel before serving.

Ready to be served – serve with your choice of soup or dipping sauce. For storage, you can freeze the pre-fried spring rolls for 2 months. Otherwise, eat immediately if fried.
