Egyptian Moussaka

Ingredients:

  • Eggplant (2)

  • Bell Peppers (2)

  • Onions (1)

  • Tomato (1)

 

Ingredients:

  • Tomato Sauce (3 tbsp)

  • Extra Virgin Olive Oil (1 tbsp)

  • Oregano (1 tsp)

  • Pepper (1 tsp)

 

Instructions:

  • Slice the eggplants.

  • Chop the onion, peppers, and tomato finely.

 

Instructions:

  • Drizzle the eggplant slices with olive oil.

  • Cook on the Air Fry setting at 390°F (198°C) for 10 minutes.

    • Settings will vary per air fryer, adjust accordingly

    • If you don’t have an air fryer, put it in the oven at 350°F (176°C) for 30 minutes.

 

Instructions:

  • Mix the diced onion, peppers, and tomato with olive oil.

  • Cook the vegetables on the stove’s High heat setting for 5 minutes.

 

Instructions:

  • Place the eggplant slices in a baking pan with the mixed vegetable salsa on top.

  • Cook it in the oven at 350°F (176°C) for 20 minutes.

 

Egyptian Moussaka completed!

Ready to be served – feel free to eat with pita bread. For storage, refrigerate for 4 days.
