Spanakopita Omelette

Ingredients:

  • Feta Cheese (1 tbsp)

  • Radish (1)

  • Cherry Tomatoes (5)

 

Ingredients:

  • Extra Virgin Olive Oil (2 tbsp)

  • Eggs (2)

  • Salt and Pepper (1/2 tsp)

 

Ingredients:

  • Mushroom (2 tbsp)

  • Carrot (2 tbsp)

  • Red Pepper (2 tbsp)

  • Green Onion (2 tbsp)

  • Parsley (2 tbsp)

 

Ingredients:

  • Pumpkin Seeds (1 tsp)

  • Cornstarch (1 tsp)

  • Baking Powder (1/2 tsp)

 

Instructions:

  • Crack two eggs into a bowl.

  • Place chopped red peppers, cilantro, green onions, and carrots.

  • Add mushroom and pumpkin seeds.

  • Mix all ingredients.

 

Instructions:

  • Pour water (1 tbsp) into cornstarch and baking powder mixture.

  • Add this mixture to the eggs and veggies.

  • Add salt and pepper.

 

Instructions:

  • Pour the egg mixture into the extra virgin olive oil.

  • Cook the omelette on the stove’s Medium heat setting for 2 minutes.

  • Flip sides and cook for another 2 minutes.

 

Instructions:

  • Let the omelette rest for a minute before adding garnishes and serving.

 

Spanakopita Omelette completed!

Ready to be served – garnish with feta cheese and radish slices. Refrigeration for storage is not recommended, eat immediately.
