Feta Cheese (1 tbsp)
Radish (1)
Cherry Tomatoes (5)
Ingredients:
Extra Virgin Olive Oil (2 tbsp)
Eggs (2)
Salt and Pepper (1/2 tsp)
Ingredients:
Mushroom (2 tbsp)
Carrot (2 tbsp)
Red Pepper (2 tbsp)
Green Onion (2 tbsp)
Parsley (2 tbsp)
Ingredients:
Pumpkin Seeds (1 tsp)
Cornstarch (1 tsp)
Baking Powder (1/2 tsp)
Instructions:
Crack two eggs into a bowl.
Place chopped red peppers, cilantro, green onions, and carrots.
Add mushroom and pumpkin seeds.
Mix all ingredients.
Instructions:
Pour water (1 tbsp) into cornstarch and baking powder mixture.
Add this mixture to the eggs and veggies.
Add salt and pepper.
Instructions:
Pour the egg mixture into the extra virgin olive oil.
Cook the omelette on the stove’s Medium heat setting for 2 minutes.
Flip sides and cook for another 2 minutes.
Instructions:
Let the omelette rest for a minute before adding garnishes and serving.
Spanakopita Omelette completed!
Ready to be served – garnish with feta cheese and radish slices. Refrigeration for storage is not recommended, eat immediately.
